Beetroot is a great crop for beginner gardeners as it is easy to grow and offers a range of uses. The roots come in various shapes and colours, ranging from dark purple-red to pink, yellow, and even white. The best time to harvest the roots is when they are young, no bigger than a golf ball. They can be eaten pickled, roasted, or grated and used in salads. The leaves of the beetroot can also be harvested, with younger greens suitable for salads and older greens blanched like spinach.
Beta vulgaris ‘Darko’ is a variety of beetroot with a deep-red, globe-shaped root and a smooth skin. It has a traditional beetroot flavour and is ideal for various uses, such as eating raw in salads, boiling, roasting or pickling. Sow a short row of seeds every three weeks for a regular supply throughout summer and autumn.
