Scotch Bonnet Red is a type of chilli pepper originating from the Caribbean. It has a distinctive shape similar to that of a tam o'shanter hat, with a wrinkled and bumpy texture. The pepper is about 5cm long and 4cm wide and is red when ripe. It is a very spicy pepper with a rating of 100,000-350,000 on the Scoville scale, making it one of the hottest peppers in the world. The flavour of the Scotch Bonnet Red is sweet and fruity, with hints of citrus and apricot. It is commonly used in Caribbean cuisine to add heat and flavour to dishes such as jerk chicken, curry goat, and pepper sauce.
