Borage (Borago officinalis) is an annual herb with bright blue, star-shaped flowers that bloom from early summer to early fall. It is native to the Mediterranean region, but it has been naturalized in other parts of the world. Borage grows up to 60cm tall and is covered in coarse, bristly hairs.
The leaves of the borage plant are large, rough, and covered in small, white hairs. They are not particularly appetising but the flowers are edible with a light cucumber flavour and can be used to decorate cakes, desserts, and cocktails. Freeze individual flowers in icecubes for pretty additions to summer drinks.
Borage prefers full sun and well-draining soil and will seed itself freely to colonise an area. Borage is also an excellent companion plant for many vegetables, including tomatoes, squash, and strawberries, as it attracts beneficial insects like bees and predatory wasps.
